    Turkey with Herbes de Provence and Citrus
    Ingredients

    1 (14 to 15-pound) turkey, neck and giblets reserved
    1 orange, cut into wedges
    1 lemon, cut into wedges
    1 onion, cut into wedges
    6 fresh rosemary sprigs
    6 fresh sage sprigs
    6 fresh oregano sprigs
    7 tablespoons unsalted butter
    2 tablespoons herbes de Provence
    1 tablespoon olive oil
    1 1/2 teaspoons salt
    1 1/2 teaspoons freshly ground black pepper
    6 cups canned low-salt chicken broth (approximate amount)
    1/3 cup all-purpose flou

    Directions
    1. To make the turkey: Position the rack in the lowest third of the oven and preheat to 400 degrees F.

    2. Rinse the turkey and pat it dry with paper towels. Place the turkey on a rack set inside a large roasting pan. Place the orange and lemon wedges, onion, and 2 sprigs of each fresh herb in the main turkey cavity. Tie the legs together to hold the shape of the turkey. Stir 2 tablespoons of butter, the herbes de Provence, oil, and 1 1/2 teaspoons of each the salt and pepper in a small saucepan over medium heat just until the butter melts. Rub the butter mixture all over the turkey and between the turkey breast meat and skin. Place the turkey neck and giblets in roasting pan. (Recipe can be prepared up to this point 1 day ahead. Cover and refrigerate. Let stand at room temperature 30 minutes before roasting.)

    3. Cover the turkey breast with foil. Roast for 20 minutes. Pour 3 cups of broth into the pan and stir to scrape up any brown bits on the bottom of the pan. Add the remaining sprigs of fresh herbs to the pan. Roast the turkey for 40 minutes. Reduce the oven temperature to 350 degrees F. Remove the foil from the turkey; pour 1 more cup of broth into the pan. Continue roasting the turkey until a meat thermometer inserted into the thickest part of the thigh registers 165 degrees F to 175 degrees F or until the juices run clear when the thickest part of the thigh is pierced with a skewer, basting occasionally with pan juices, about 1 hour and 30 minutes longer. Transfer the turkey to a platter and tent with foil. Let stand 30 minutes while preparing the gravy.

    4. To make the gravy: Strain the turkey pan juices from the roasting pan through a sieve and into a 4-cup glass measuring cup; discard the solids. Spoon off the fat from atop the pan juices. Add enough chicken broth, about 1 to 2 cups, to the pan juices to measure 4 cups total. Melt the remaining butter in a heavy large saucepan over medium-high heat. Add the flour and whisk for 1 minute. Gradually whisk in the broth. Simmer until the gravy thickens slightly, whisking often, about 10 minutes. Season with salt and pepper. Serve the turkey with the gravy.

    Sausage Cornbread Stuffing
    Ingredients

    Extra-virgin olive oil
    1 large onion, small dice
    3 ribs celery, small dice
    Kosher salt
    1 pound spicy sausage, casing removed, broken into bite-size chunks
    3 cloves garlic, smashed and finely diced
    3/4 cup coarsely chopped walnuts
    10 sage leaves, finely chopped
    3 sprigs rosemary, leaves finely chopped
    10 cups stale cornbread, cut into 1-inch cubes
    2 cups dried cranberries
    3 to 4 cups chicken stock

    Directions
    1. Preheat the oven to 350 degrees F.

    2. Coat a large saute pan with olive oil, add the onions and celery and saute over to medium heat. Season with salt and cook until the vegetables start to become soft and are very aromatic. Add the sausage and cook until the sausage begins to brown. Stir in the garlic and saute for another 1 to 2 minutes. Add the walnuts, sage and rosemary and cook for another minute, then remove from heat.

    3. In a large bowl mix together the cornbread, cranberries, and the sausage mixture. Add chicken stock and knead with your hands until the bread is very moist, actually wet. Taste to check for seasoning and season with salt, if needed and transfer to an ovenproof dish.

    4. Bake the stuffing until it is hot all the way through and is crusty on top, about 30 to 35 minutes.

    Sausage-Stuffed Mushrooms

    Ingredients
    16 extra-large white mushrooms
    5 tablespoons good olive oil, divided
    2 1/2 tablespoons Marsala wine or medium sherry
    3/4 pound sweet Italian sausage, removed from the casings
    6 scallions, white and green parts, minced
    2 garlic cloves minced
    2/3 cup panko crumbs
    5 ounces mascarpone cheese, preferably from Italy
    1/3 cup freshly grated Parmesan
    2 1/2 tablespoons minced fresh parsley leaves
    Salt and freshly ground black pepper

    Directions
    1. Preheat the oven to 325 degrees F.

    2. Remove the stems from the mushrooms and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and toss with 3 tablespoons of the olive oil and Marsala. Set aside.

    3. Heat the remaining 2 tablespoons olive oil in a medium skillet over medium heat. Add the sausage, crumbling it with the back of a wooden spoon. Cook the sausage for 8 to 10 minutes, stirring frequently, until it's completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the scallions and garlic and cook for another 2 to 3 minutes, stirring occasionally. Add the panko crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the sausage mixture creamy. Off the heat, stir in the Parmesan, parsley, and season with salt and pepper, to taste, Cool slightly.

    4. Fill each mushroom generously with the sausage mixture. Arrange the mushrooms in a baking dish large enough to hold all the mushrooms in a snug single layer. Bake until the stuffing for 50 minutes, until the stuffing is browned and crusty.

    The Baked Potato
    Ingredients

    1 large russet potato (If it looks like Mr. Potato Head®, you've got the right one.)
    Canola oil to coat
    Kosher salt
    Optional toppings, such as butter, sour cream, shredded Cheddar and/or scallions

    Directions
    1. Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.

    2. Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam. Add toppings if using.

    Perfect Cranberry Sauce

    Directions

    1. Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

    RIB ROAST WITH MUSTARD HORSERADISH SAUCE

    Ingredients

    One 3-rib standing rib roast (7 to 8 pounds)
    1 tablespoon kosher salt
    1 1/2 teaspoons freshly ground black pepper
    *Mustard Horseradish Sauce, recipe follows

    Procedure
    1. Two hours before roasting, remove the meat from the refrigerator and allow it to come to room temperature.
    2. Preheat the oven to 500 degrees F (see Cook's Note).
    3. Place the oven rack on the second lowest position.
    4. Place the roast in a pan large enough to hold it comfortably, bone-side down, and spread the top thickly with the salt and pepper. Roast the meat for 45 minutes. Without removing the meat from the oven, reduce the oven temperature to 325 degrees F and roast for another 30 minutes. Finally, increase the temperature to 450 degrees F and roast for another 15 to 30 minutes, until the internal temperature of the meat is 125 degrees F. (Be sure the thermometer is exactly in the center of the roast.) The total cooking time will be between 1 1/2 and 1 3/4 hours. Meanwhile, make the sauce.
    5. Remove the roast from the oven and transfer it to a cutting board. Cover it tightly with aluminum foil and allow the meat to rest for 20 minutes. Carve and serve with the sauce.

    Mustard Horseradish Sauce:
    1 1/2 cups good mayonnaise
    3 tablespoons Dijon mustard
    1 1/2 tablespoons whole-grain mustard
    1 tablespoon prepared horseradish
    1/3 cup sour cream
    1/4 teaspoon kosher salt

    Procedure
    1. Whisk together the mayonnaise, mustards, horseradish, sour cream, and salt in a small bowl.

    ROAST PRIME RIB WITH THYME AU JUS


    Ingredients

    1 bone-in prime rib (6 to 7 pounds)
    8 cloves garlic, thinly sliced
    Salt and coarsely ground black pepper
    2 cups red wine
    4 cups beef stock
    1 tablespoon chopped fresh thyme leaves

    Procedure
    1. Thirty minutes before roasting the prime rib, remove from the refrigerator and let come to room temperature.
    2. Preheat oven to 350 degrees F.
    3. Make small slits all over the prime rib and fill each slit with a slice of the garlic. Season liberally with the salt and coarse pepper, place on a rack set inside a roasting pan and roast for about 2 hours until medium-rare, or until a thermometer inserted into the center of the meat registers 135 degrees F. Remove the meat to a platter, and tent with foil to keep warm.
    4. Place the roasting pan on top of the stove over 2 burners set on high heat. Add the wine to the pan drippings in the pan and cook over high heat until reduced, scraping the bottom of the pan with a wooden spoon. Add the stock and cook until reduced by half. Whisk in the thyme and season with salt and pepper, to taste.
    5. Slice meat as desired and serve with thyme au jus.

    MILLIONAIRE'S HAM

    Ingredients

    One 8-to-10-pound bone-in fully-cooked ham
    3 1/2 cups packed light brown sugar
    1 3/4 cups orange juice
    1 teaspoon cayenne pepper
    Kosher salt and freshly ground black pepper

    Procedure
    1. Preheat the oven to 350 degrees F. Line the bottom and the rack of a roasting pan with foil. Place the rack inside the roasting pan.
    2. With the fatty side facing down, use a sharp knife to cut 3/4-inch long diagonal lines about 1-inch deep all over the surface of the ham. Working in the opposite direction, cut more 3/4-inch long and 1-inch deep diagonal lines to create diamond shapes. Turn the ham over so the fatty side is facing up. Create the same diamond shape placing any pieces of ham that fall off back onto the ham. Place the ham, fatty-side up, on the rack and cook, rotating the pan halfway through, until warm in the center and the fat starts to crisp up, about 2 hours.
    3. Meanwhile, mix 3 cups sugar, 3/4 cup orange juice, 1/2 teaspoon cayenne pepper, 1 tablespoon salt and 1 teaspoon pepper in a medium bowl. Remove the ham from the oven and carefully brush one-third of the glaze all over the ham. Bake the ham for 20 minutes. Brush with another third of the glaze and bake for 20 minutes more. Brush the remaining third of the glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 30 minutes more.
    4. Mix the remaining 1/2 cup sugar, 1 cup orange juice, 1/2 teaspoon cayenne pepper and a generous amount of pepper in a small saucepan and bring to a boil over medium-high heat. Cook, stirring frequently, until the sugar is dissolved and the sauce has reduced by about half, 7 to 8 minutes. Remove the ham from the oven and let rest for 15 minutes. Transfer to a cutting board. Slice and serve with the sauce on the side.
